Apple Pie Cake

Ingredients 

FOR THE APPLES:

  • 3 medium apples
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

FOR THE CINNAMON SUGAR TOPPING:

  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon

FOR THE CAKE:

  • 1/2 cup butter (softened)
  • 2/3 cup sugar
  • 1 1/2 cups all purpose flour
  • 1 3/4 teaspoon baking powder
  • 2 large eggs (room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup milk
  • 1/2 cup pecans (chopped)

FOR THE GLAZE:

  • 1/2 cup powdered sugar
  • 1 tablespoon water

Instructions 

  • Preheat oven to 350º Fahrenheit.
  • Spray a 9×13” baking dish with cooking spray.

PREPARE THE APPLES:

  • Peel, core and chop apples into chunks. Toss in 2 tablespoons sugar and 1 teaspoon cinnamon. Set aside.

PREPARE THE CINNAMON SUGAR TOPPING:

  • Mix brown sugar and 1 teaspoon cinnamon together in a bowl. Set aside.

MAKE THE CAKE:

  • In a medium sized bowl, cream together the butter and sugar.
  • Add flour and baking powder and mix well.
  • Add eggs one at a time (and beat well between each).
  • Stir in vanilla and milk until smooth.
  • Gently fold in chopped pecans.

ASSEMBLE THE CAKE:

  • Pour the batter into the baking dish.
  • Spread the apple mixture evenly over the cake batter and sprinkle the brown sugar and cinnamon mixture on top.
  • Lightly pat apples into the batter and swirl the brown sugar mixture through the apples using a knife.
  • Bake for about 40 minutes or until a toothpick can be inserted in the center of the cake and comes out clean.
  • Let the cake cool for 15 minutes.
  • Combine powdered sugar and water to create a glaze and then pour over your apple pie cake.
  • Serve warm.
