Date Nut Mayonnaise Cake

Ingredients 

FOR THE CAKE:

  • 1 cup boiling water
  • 1 cup finely chopped dates
  • 2 teaspoons baking soda divided
  • 1 cup sugar
  • 1 cup mayonnaise
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • ½ cup chopped pecans

FOR THE FROSTING:

  • 8 ounces cream cheese softened
  • 2 tablespoons salted butter
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar
  • ½ cup chopped pecans for topping

Instructions 

  • Spray a 9×13 pan with cooking spray. Preheat the oven to 350º Fahrenheit.
  • In a large bowl, pour the boiling water over the chopped dates.
  • Add one teaspoon of baking soda, stir and then set aside for 10 minutes.
  • Add the sugar, mayonnaise, vanilla and mix well.
  • Add the last teaspoon of baking soda and flour and mix until combined. Then fold in the pecans.
  • Bake for 45-50 minutes or until the cake tests done.
  • In a medium bowl, use a hand mixer to cream the cream cheese and butter until smooth.
  • Add the vanilla extract and powdered sugar. Mix well.
  • Spread the frosting over the warm cake.
  • Sprinkle with the pecans.
  • Serve with ice cream.
