Banana Upside Down Cake


  • ¾ cup firmly packed brown sugar
  • 1 cup butter softened (2 sticks)
  • 2-3 bananas sliced
  • 2 ¼ cups all purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 ½ cups granulated sugar
  • 3 large eggs separated
  • 1 ½ teaspoons vanilla extract
  • ¾ cup milk


  • Preheat the oven to 350º Farenheit.
  • In a saucepan, combine brown sugar and 4 tablespoons of butter (½ stick). Melt the butter and stir to combine.
  • Pour this mixture into a greased 9” round springform pan (or cake pan with 3” sides).
  • Arrange bananas over the sugar in concentric circles.
  • In a small bowl, whisk together the flour, baking powder and cinnamon. Set aside.
  • In another bowl, cream together the remaining butter and granulated sugar.
  • Add in the egg yolks and vanilla and beat well.
  • Add in the flour mixture alternately with the milk, mixing between each addition.
  • In a small clean bowl, use a hand mixer (or stand mixer) with clean, grease-free beaters to whip the egg whites until they hold stiff peaks.
  • Fold the egg whites into the batter carefully.
  • Spoon the cake batter over the banana slices.
  • Bake at 350º Fahrenheit for 50-60 minutes or until the cake tests done.
  • Cool for 10 minutes, then turn out onto a plate to cool completely.
  • Serve with ice cream.
