Apple Crisp Coffee Cake

Ingredients 

FOR THE CAKE:

  • 1/2 cup butter room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 2 cups finely chopped apple

FOR THE STREUSEL CRISP:

  • ¾ cup old fashioned oats
  • ¾ cup all purpose flour
  • ¾ cup packed brown sugar
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ cup salted butter (melted)

FOR THE GLAZE:

  • 1 1/2 cups powdered sugar
  • 1 tablespoon apple cider (or apple juice)
  • 3-5 tablespoons heavy cream

Instructions 

  • Preheat the oven to 350º Fahrenheit. Spray a 9×13 baking pan with cooking spray.
  • Cream the butter and sugar together until smooth.
  • Add the eggs and vanilla. Beat well.
  • In a separate bowl, whisk together the flour, baking powder, soda and salt.
  • Add the flour mixture to the creamed butter alternately with the sour cream.
  • Spread the batter in the prepared pan.
  • Sprinkle the chopped apples on top of the batter
  • In a small bowl, mix together the oats, flour, brown sugar, baking powder & soda, cinnamon and melted butter.
  • Sprinkle the topping over the batter.
  • Bake for 40-45 minutes or until the cake tests done.
  • In a small bowl, mix together the powdered sugar, apple cider and 2 tablespoons heavy cream. Whisk together to combine well. Add another tablespoon or two of heavy cream if needed until the glaze is at drizzling consistency.
  • Drizzle over the cake.
  • Serve with ice cream.
