New York Crumb Cake

Ingredients 

FOR THE CRUMB TOPPING:

  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • ½ cup salted butter melted
  • 1 ¾ cups cake flour

FOR THE CAKE:

  • 1 ¼ cups cake flour
  • ½ cup granulated sugar
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 tablespoon coconut oil
  • 6 tablespoons salted butter at room temperature (cut into squares)
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • ⅓ cup buttermilk

Instructions 

MAKE THE CRUMB TOPPING:

  • Place the sugars, cinnamon, salt and butter in a bowl. Mix well.
  • Add the cake flour and mix until a ball forms. Set aside.

MAKE THE CAKE:

  • Preheat the oven to 325º Fahrenheit. Spray an 8×8 baking pan with cooking spray.
  • In a bowl, mix together the flour, sugar, baking soda, and salt.
  • Add in the coconut oil and butter, mixing until the mixture looks like a crumble.
  • Add in the eggs, vanilla and buttermilk.
  • Mix 1-2 minutes until light and fluffy.
  • Pour the batter into the greased pan. Smooth it evenly.
  • Take the topping and make small marble sized chunks, sprinkling them over the batter evenly.
  • Bake for 40-45 minutes or until a toothpick comes out clean.
  • Allow the cake to cool, then sprinkle with powdered sugar.
