Vanilla Eclairs

*Ingredients /

for 5 people+

Eclair dough:

°50 grams butter

°100 grams flour

°1 deciliter of water

°3 or 4 eggs

°a pinch of salt


°1 pint milk

°100 grams of sugar

°liquid vanilla extract

°50 grams of flour

°2 egg yolks

°1 sachet of vanilla sugar

+melting chocolate:

° 1 or 2 pieces of dark chocolate



* preparation:

1 Eclair dough: Melt the butter in salted water. Once the butter has melted, remove the pan from the heat and add all the flour at once. Put the dough on a low heat until a ball forms. Remove from heat and add eggs. Put the dough in a cavity and make small balls or sausages about 10 cm from it. Put the oven at 220 ° C, and as soon as the eclair rises, put the oven at 200 ° C. Cook until the eclairs are well browned.

2 Pastry cream: Mix the egg yolk with sugar. Beating with a whisk to mixture turns white. Add the flour with the sugar and egg mixture. Add half a cup of milk to make the mixture more liquid. Heat the rest of the milk. When it becomes lukewarm, add the previously prepared mixture and a spoonful of vanilla extract. Bring the mixture to a boil, then remove from the heat until the cream is ready. Cut a “hat” into the eclairs, put the cream in a nozzle and then arrange it in the eclairs.

Chocolate fondant:

Put the chocolate in a bowl with a little sugar and a little milk. Melt in the microwave. Once the chocolate has melted, mix well and then place over the eclair using a teaspoon.
