Brassica cores are not meant for the compost. While florets are the most visually and texturally compelling, stems and cores are equally divine and delicious in their own right. They can be roasted, sautéed, grated, steamed and smashed, and even “riced.” Below, we’re sharing just a few quick and easy ways that you can save your scraps and put them to delicious use.
